Amount Ingredients
30 mL olive oil
30 mL onions, minced
30 mL celery, peeled, minced
60 mL red pepper, minced
175 mL mayonnaise
2 each eggs, beaten
15 mL lemon juice, fresh
10 mL lemon zest
15 mL Old Bay seasoning (optional)
1 1/4 mL hot red pepper sauce
2 1/2 mL garlic, fresh, minced
25 gm Custom Culinary® Gold Label Lobster Base
350 mL bread crumbs, plain
8 mL parsley, fresh chopped
120 mL parmesan cheese, fresh grated
1 kg Lump, Blue, or King crab meat

  1. In a sauté pan over medium high heat, sauté onions, celery, and pepper in oil for 2-3 minutes until onions are translucent. Chill mixture.
  2. In a separate stainless steel mixing bowl, combine mayonnaise, eggs, lemon juice and zest, hot red pepper sauce, Old Bay seasoning, garlic and Gold Label Lobster Base. Add chilled sautéed vegetables. Blend thoroughly.
  3. Add bread crumbs, parsley, and cheese. Blend thoroughly.
  4. Carefully fold in crab meat.
  5. Form mixture into individual portions.
  6. Cook in lightly oiled sauté pan or griddle on medium high heat until golden on each side.
  7. Serve with Lobster, Dijon and Roasted Red Pepper dipping sauce. (See separate recipe.)
