Amount Ingredients
30 mL olive oil
60 mL onions, medium diced
30 mL leeks, white only, sliced thin
60 mL red bell peppers, medium diced
60 mL chanterelle, morel, shiitake mushrooms, sliced
4 mL garlic, fresh, minced
450 gm seafood, medium diced (any combination of shellfish - lobster, shrimp, scallops)
1/2 L water (#1)
45 gm Custom Culinary® Gold Label Lobster Base
236 mL tomatoes, canned, diced in juice
3/10 mL white pepper, ground
236 mL water (#2)
120 mL cornstarch
18 mL thyme, fresh, chopped

  1. In a large sauté pan over medium high heat, heat olive oil and sauté leeks, onions, and peppers until onions are translucent. Add mushrooms and garlic; sauté 1-2 minutes.
  2. Add seafood and sauté 1-2 minutes.
  3. Add water #1, Gold Label Lobster Base, tomatoes and white pepper. Heat to a boil, reduce heat, and simmer 1-2 minutes.
  4. In a separate bowl, blend water #2 and cornstarch into a slurry using a wire whip. Add to seafood mixture, stirring constantly. Heat to boiling and cook 1 minute.
  5. To finish: Blend in fresh thyme. Serve 120 mL portion of Ragout Sauce with each 200 gm portion of grilled salmon, halibut or fish of choice.
