2 L cream, whole, heavy whipping
56 gm Custom Culinary® Gold Label Lobster Base
5 mL black pepper, ground
475 mL parmesan cheese, fresh, grated
60 mL sherry, pale dry
170 gm lobster meat, cooked, diced

Directions

  1. In a 1 gallon sauce pot over medium high heat, combine cream, Gold Label Lobster Base, and black pepper. Simmer 2-3 minutes to infuse flavor, stirring occasionally.
  2. Add cheese and sherry. Stir until well blended. Remove from heat.
  3. To serve: Toss with prepared hot pasta of choice. Garnish each portion with 15 gm lobster meat or seafood of choice.
  4. Flavor variations: - Caribbean style: Blend 18-36 mL Caribbean Jerk Seasonings. - Tuscan style: Blend 120 mL prepared pesto.
